Banana Oat Cakes

I saw something similar to this being passed around on Facebook and it gave me ideas. The post itself is pretty stupid but I recognized its potential. These are like pancakes, only totally different and incredibly healthy. They are more dense and filling than pancakes and aren't as fluffy, but they are delicious and nutritious! You will be full for hours after eating these. This is also great for using up any bananas that are getting too ripe to just eat; the riper the banana the sweeter it will be!


Start by blending together 1 banana, about 1/2 cup oats, and just a dash of milk - 1/4 cup tops - until creamy smooth.


Pour into a small bowl and whip in an egg and 1/2 tsp vanilla. This doesn't need any added sugar because bananas are so sweet! I left it as is for this first experiment but this would be the time to add any extras if you are so inclined. It would be divine with chocolate chips and cinnamon!

Melt a teeny pat of butter in a skillet and pour in some of the mixture - I divided it into fourths. Cook about 3 minutes per side, or until golden brown. We served with natural maple syrup, but it would also be amazing with honey!


Two cakes have 180 calories, not to mention all the vitamins and nutrients packed in there...they're so healthy it's unreasonable! Better serve it up with bacon and sausage.
